The climate found in the area of the «Montilla-Moriles» DOP is classified in general as semi-continental Mediterranean, with long, dry, warm summers and relatively mild and short winters. In this central area of Andalusia, higher temperatures are recorded in the months of July and August of the Iberian peninsula, with historical highs exceeding the 46 ° C. The hours of effective sunlight are placed around the 3000 per year. The annual rainfall ranges between 500 and 1000 mm, characterized by irregular both in the annual allocation and interannual.

White with aging: wine limpid, bright, transparent, golden yellow to mahogany, from dry to sweet, light, with a typical of the grape Pedro Ximénez aromatic nuance, and an aroma and flavor characteristic of parenting.

Fino: It came clear, bright, transparent, yellow straw to Golden, dry, with aroma and flavor characteristic of biological ageing, with nuances of grape Pedro Ximénez, slightly bitter, light and fragrant taste.

Amontillado: Wine limpid and bright, clear, amber, old gold, pungent aroma, countersunk, dry or almost doomed, full and soft on the palate.

Oloroso: It came bright and limpid, transparent, similar to the one of the mahogany color, very aromatic, energetic, dry or slightly sweet, full-bodied, full and velvety.

Palo cortado: wine limpid and glossy, transparent, amber to mahogany, characteristic aroma with notes that are reminiscent of the Amontillado, but on the palate it presents characteristics similar to the Oloroso.

Pedro Ximénez: Clear and bright, with a color range that goes from amber to mahogany intense and dense aspect; with aromatic notes of raisins features grape Pedro Ximénez sunny, sweet, soft and velvety on the palate.

Moscatel: Clear and bright, with a color range that goes from amber to mahogany intense and dense aspect; with the varietal aromatic notes features grape Muscat, in his case with the nuances derived from the process of sunlight, sweet and unctuous on the palate.

Fortified liqueur wine (Vino generoso de licor): wine limpid and glossy, transparent, amber to mahogany, aroma that combines their own breeding and taste of sweet to semi-sweet.

Pale Cream: It came clear and bright, transparent, straw yellow to a pale gold colour, with aroma of biological breeding and sweet taste.

Cream: Wine limpid and bright, intense amber to mahogany, scented deep oxidative aging and sweet taste.
